Eggnog Snickerdoodles are delicious cookies that are soft and melt in your mouth. They have just the right amount of sugar, cinnamon, nutmeg, and eggnog added! Every holiday dessert table should have a platter of these Eggnog Snickerdoodles.
Additionally, these cookies bake in just eleven minutes making them perfect to pop in the oven right before guests arrive.
Therefore, I love preparing the cookie dough and letting it chill in the refrigerator or freezing it until needed for holiday gatherings.
At first, it took a bit for me to get used to the Eggnog Snickerdoodles being puffy. Most of the cookies I bake are flat and crunchy.
After a few batches, I realized they were supposed to be thick, puffy, and soft. Even though the Eggnog Snickerdoodles were soft and puffy they still had a bit of a chewy crunchy outside.
My son preferred the Snickerdoodles instead of the cookies I usually bake.
How Do You Make Eggnog Snickerdoodles?
First of all, gather all the baking ingredients needed. Make sure to grab a cookie sheet lined with parchment paper and at least two mixing bowls.
Once the flour, cornstarch, baking powder, cinnamon, nutmeg, and salt was measured I poured them into a bowl.
In a separate bowl, I gently whisked together the butter, eggnog, vanilla and stirred in the granulated and brown sugars.
Next, I added the flour mixture and folded it into the bowl with the eggnog and other ingredients.
Then I popped the cookie dough into the fridge for an hour covered with saran wrap.
After I placed the cookie dough mixture into the fridge I prepared the last of the ingredients; the sugar, cinnamon, and nutmeg in a smaller bowl.
When I took the cookie dough out the fridge I used a cookie dough scoop to form a ball in my hand and then I rolled the dough into the cinnamon mixture several times.
I repeated each step until 12 cookies were formed then I baked the cookies in the oven on 350 degrees for eleven minutes.
Lastly, I removed the Snickerdoodles from the oven and cooled them on the cookie sheet. These cookies are perfect to dip in a glass of milk or a glass of eggnog.
Can I Freeze the Eggnog Snickerdoodles?
Yes, you can bake the Eggnog Snickerdoodles according to the recipe once the cookies are cooled completely place them in an airtight container.
Put a piece of parchment paper between each layer of cookies and on top of the cookies and freeze for at least two months.
If you want to freeze the cookie dough the best way is to roll dough into a log and cover with parchment paper and place into a freezer bag and freeze until needed no longer than two months.
When your ready to use the dough remove from the freezer and place in the fridge overnight.
Cut the cookies into desired size and roll into the cinnamon mixture before baking.
