I love this time of year when my garden produces delicious vegetables. I enjoy picking and using veggies to make meals for my family. This year the bell pepper plants we planted produced beautiful vibrant green peppers. I couldn’t wait until I was able to pick them to make one of my family’s favorite meals. If you love Stuffed Bell Peppers, you should try this recipe.
6-8 Bell Peppers (Medium – Large Size)
2 cups Instant brown rice
1-lb Ground meat
1-lb Pork sausage
1-lb Italian sausage
1-cup Yellow onions minced
3/4 cup Minced garlic
2 -15 oz. cans Tomato sauce
2-tbs. olive oil
2-tbs. olive oil
salt , pepper , garlic powder
Brown the meat and drain the fat . Add 1 can tomato sauce to the meat and cook over low heat 5-10 minutes stirring.
Saute onions and mince garlic in a pan using the olive oil, until soft then add to meat.
Cook brown rice according to instructions on the box.
Add rice to the meat mixture on low heat, stir in salt , pepper, garlic powder, and Louisiana seasoning to your liking.
Cook for 3-4 minutes and set aside.
Boil Bell Peppers in boiling water for 4-5 minutes.
* important step* (forgot to take picture) next , gently remove peppers and place into large bowl filled with ice water .
Next, take your remaining can of tomato sauce and cook it over medium heat. Stir in salt , pepper, garlic powder, and Louisiana seasoning to your liking .
Cook until it boils and remove it from burner.
Optional: add mince garlic and onion powder. Spread a layer of the sauce onto a baking dish.
Gently cut off the tops of the bell peppers and remove the seeds.
Place peppers on baking dish, then stuff with the meat mixture.
Put sauce on each pepper and place into a 350 degree
Fahrenheit preheated oven. Cook for 30 minutes.
Remove baking dish from oven and let set for 5 minutes before serving.
* note * This is how my family likes their stuffed peppers made . I ‘ve seen many different variations for stuffed bell peppers. Some people use cream cheese, some use Zatarains dirty rice mix , some sprinkle shredded cheese on top , some mix in cans of rotel , and some put spaghetti sauce on top . You can use any color bell pepper you want.
