Here’s a delicious recipe that I made using Banana Peppers from my Garden. I was pleasantly surprised how much I enjoyed the taste of the peppers. I decided to use my recipe for stuffed bell peppers, tweaking it a bit to give the banana peppers it’s own delicious taste.
6-8 Banana Peppers
2 lbs. Italian Sausage
2 tbs. olive oil
1/4 cup minced garlic
1/4 cup green diced onions
1/2 cup yellow onions
1 (8oz.) can tomato sauce
1(8oz.) bag Shredded Cheese
1 (8 ounce ) package white mushrooms (chopped)
1 (11 oz. ) can rotel tomatoes and green chilies
Boil Banana Peppers in a pot of water on stove for 3-4 minutes. Remove peppers to a bowl of ice water. Let cool. Remove tops from peppers. Set peppers aside. Next, sauté yellow onions, garlic, and mushrooms until soften then remove from stove. Brown your sausage (remove grease) stir in rotel tomatoes and green chilies, yellow onions, garlic, mushrooms,1/2 can tomato sauce let cook for 15 minutes. Add 1/2 cup shredded cheese mix well together. Remove from stove.
Using a casserole dish spread the remainder of the tomato sauce on the bottom of the dish. Stuff each banana pepper with the meat mixture (use a teaspoon or place mixture in a bag with tip cut off) , place each pepper in the dish. Any left over meat mixture can be put on top of the peppers. Sprinkle peppers with the remainder of the cheese . Bake in 350 Fahrenheit pre-heated oven until cheese is melted. Remove from oven and let cool. Garnish with green onions.
