Ingredients
- 1 cup vegetable broth
- 1 can pumpkin puree or fresh pumpkin roasted and pureed
- 1/2 white onion; diced
- 2 sprigs of thyme
- 1 teaspoon olive oil or 1/2 tablespoon butter
- salt and pepper
Instructions
- Place olive oil or butter and onions into a sauce pan. Bring to medium heat and cook until onions are transparent.
- Add pumpkin puree and vegetable broth. Whisk well. Set to low and cook for 3 minutes.
- Add thyme and stir.
- Season with salt and pepper to your liking.
- Serve and enjoy!
Notes
May add Cajun seasoning if you like your soup spicy.
You could add whipping cream to the soup if you want.
May substitute low-sodium chicken broth for the vegetable broth.
