This simple, easy, and comforting Pumpkin Soup is the BEST comfort food to welcome in the fall weather.



  • 1 cup vegetable broth
  • 1 can pumpkin puree or fresh pumpkin roasted and pureed
  • 1/2 white onion; diced
  • 2 sprigs of thyme
  • 1 teaspoon olive oil or 1/2 tablespoon butter
  • salt and pepper


  1. Place olive oil or butter and onions into a sauce pan. Bring to medium heat and cook until onions are transparent.
  2. Add pumpkin puree and vegetable broth. Whisk well. Set to low and cook for 3 minutes.
  3. Add thyme and stir.
  4. Season with salt and pepper to your liking.
  5. Serve and enjoy!


May add Cajun seasoning if you like your soup spicy.

You could add whipping cream to the soup if you want.

May substitute low-sodium chicken broth for the vegetable broth.
