Eggnog Snickerdoodles

Ingredients

Cookies

  • 1 cup all-purpose flour
  • 3/4 teaspoon cornstarch
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon baking powder
  • 1 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons unsalted butter, melted
  • 1/4 cup eggnog, room temperature
  • 2 teaspoon vanilla extract
  • 1/4 cup granulated sugar
  • 1/4 cup light brown sugar

Sugar Coating

  • 1 teaspoon ground nutmeg
  • 3 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

Instructions

  1. Preheat the oven to 350°F degrees.
  2. Whisk together the flour, cornstarch, baking powder, cinnamon, nutmeg, and salt in a medium bowl.
  3. In a separate bowl, whisk together the butter, eggnog, and vanilla. Stir in the granulated and brown sugars.
  4. Slowly add in the flour mixture. Fold it in lightly. Chill the cookie dough for 1 hour.
  5. Line baking sheet with parchment paper.
  6. Stir together the sugar, cinnamon, and nutmeg in a small bowl.
  7. Using a small cookie dough scoop. Place one ball of dough into your hand and roll into the sugar mixture. Roll in hand again and then back into the sugar mixture.
  8. Bake the cookies at 350°F for 11 minutes. Cool on the baking sheet.

Notes

  • Make sure the Eggnog is room temperature before using it for this recipe.
